With nearly 20 years in the hospitality industry with roles in both front of house and in the kitchen, Head Chef Lindsay Discher brings a uniquely valuable dynamic to the Saz’s State House culinary team, effortlessly bridging the gap between great food and welcoming service.
Lindsay’s love for taking classic comfort cuisine and traditional flavors and elevating them with a passion for pushing flavors is evident in Saz’s State House’ new menu. Its selection of inspired gastro pub dishes is a reflection of that culinary creativity she exudes on a daily basis.
With a start in the industry as a dishwasher, Lindsay’s friendly demeanor and curious mindset quickly moved her through the ranks to become a server, finding enjoyment in connecting with guests and ensuring they always feel welcome. From there, as her talent for providing great service developed, she moved to fine dining and began serving at Palmer’s Steakhouse in Hartland, WI. After a few more years working front of house, her personal love for cooking and her curiosity with life in the kitchen finally propelled her to pursue culinary school at Milwaukee Area Technical College, where she developed the skills she needed to make her mark as a chef.
Chef Lindsay became familiar with Saz’s through our Festivals division, before discovering Saz’s State House Restaurant, where the “everybody knows your name” feel resonated with her. To Lindsay, It’s this local first, neighborhood atmosphere that explains Saz’s longevity these past 42 years.
Away from Saz’s, Lindsay can’t stay away from the kitchen long, as she loves spending her free time baking. She feels there’s a grandeur to baking and creating items that are remembered and appreciated. Specifically, she loves baking pies, which she considers one of the ultimate comfort foods. When she’s not in the kitchen working to perfect her craft, she enjoys spending quality time with her nephew and two cats, Jameson and Oliver.
A successful restaurant is only as good as its staff and the passion they bring to their roles, in and out of the kitchen. Lindsay is a strong believer in this as she shares nearly 20 years of industry with her team to lead and inspire a well-rounded culinary crew. It’s a focus on creating shared experiences over great food with an emphasis on excellent service that makes her such an integral presence on the Saz’s team!
