With a culinary career that spans 25 years and includes over 10 years working in fine dining in the hotel and hospitality industry, Chef Marc has developed and refined his culinary abilities and cooking technique through his innate curiosity and a commitment towards continuous learning. Always curious about the “why?” in cooking, he stresses not only the importance of a solid foundation with regard to teaching and development, but also an understanding of how and why these approaches originated. When he’s in the kitchen, Marc considers his culinary team like family, where unique personalities and levels of expertise are cultivated and strengthened to create a cohesive unit.
Originally from Chicago, Illinois, Marc is a Windy City sports fan through and through, with the Chicago Blackhawks being his favorite team. When he’s not in the kitchen, you’ll find him perfecting his stroke on the golf course or taking in the sights of the city he now calls home.
