Asian BBQ Shrimp Skewer

Prep Time: 15 minutes | Cook Time: 10 minutes

Servings: 5 Skewers

Ingredients

  • 15 large shrimp

Glaze

  • 2 cups Saz’s Original BBQ Sauce
  • 2 tbsp ginger (freshly chopped)
  • 1 tbsp garlic (freshly chopped)
  • 1/4 cup scallions (freshly chopped)
  • 1/4 cup cilantro (freshly chopped)
  • 1/4 cup yellow onion (minced)
  • 1/4 cup sweet soy sauce
  • 2 tbsp sesame oil

Asian Coleslaw

  • 1 lb shredded coleslaw or Asian chopped kale mix of choice
  • 1/4 cup scallions (freshly chopped)
  • 1/4 cup cilantro (freshly chopped)
  • 1/4 cup sesame oil
  • 1/4 cup sweet soy sauce
  • 1/2 cup rice wine vinegar
  • 2 tbsp ginger (freshly chopped)
  • 1 tbsp garlic (freshly chopped)
  • 1/4 cup honey
  • 1 tbsp sesame seeds (toasted)
Instructions
  1. Prepare coleslaw at least one hour before serving. Keep the coleslaw/Asian chopped kale mix to the side as you mix all ingredients together to create the dressing. Add the coleslaw and fold the dressing in to create the mixed slaw. Set aside to reserve for serving.
  2. To make the glaze, sauté onions and garlic until translucent. Remove from heat and mix with remaining ingredients. Return to heat for 5 minutes to simmer.
  3. Skewer shrimp and brush shrimp with glaze, keeping the remaining glaze to use after cooked.
  4. Grill shrimp on a pre-heated grill on high. Shrimp can also be cooked in the oven on high broil, indoor electric grill, or air fryer. Cook until charred on outside and cooked through.
  5. To serve, place slaw on serving plate and top with shrimp skewers. Brush any remaining glaze onto the shrimp. Garnish dish with more chopped scallions and toasted sesame seeds if desired.
